Atkins Diet Recipes: Low Carb Halloween Sugar Cookies (E-IF)

In partnership with FaveHealthyRecipes, I wanted to make some dessert or snacks relevant to the upcoming holiday, Halloween. These low carb sugar cookies would work just as well at Christmas too with different icing. I will be making the icing recipe in an upcoming video. Thanks for your patience through my absence due to my new job, but I think my video uploads should return to their prior frequency soon. I also wanted to let you know I did win my age group in the Atkins All Star contest.

1/2 cup butter
1/2 cup Splenda, granulated
3 oz cream cheese
1/4 tsp salt
1/2 tsp vanilla extract
1/2 tsp almond extract
1 egg yolk
3/4 cup almond flour
1/4 cup raw coconut
Makes 20 cookies.

83 Calories, 8.3g Fat, 1.5g Total carbs (.5g Fiber), 1.7g Protein
